In 2016, a passion for deep pit Texas Style Barbecue ignited the creation of Maxon's Blue Country Barbecue. Recognizing that there was a gap in our local food scene, we set out to bring a touch of the south to Central Michigan. Starting with backyard catering, we expanded to a food truck in 2017 and finally, in 2019, we made the leap to our brick & mortar location.
Throughout our journey, we've stayed true to our roots, always preparing our BBQ and sides from scratch on a daily basis. Even during the challenges of the pandemic, we sought new ways to serve our beloved community. This led us to add New Orleans Style SnoBalls to our offering in 2021, an addition that was so well received it began to shift the direction of our business.After taking a year off in 2022 to regroup and reconsider the future of our business amidst the evolving restaurant industry, we decided to focus on our community's love for our SnoBalls. The rebrand to Northern Bayou SnoBalls & BBQ Cafe was born out of this pivotal moment.
Now, as Northern Bayou, we celebrate the fusion of our original BBQ roots and our newfound SnoBall specialty. With up to 60 tantalizing SnoBall flavors to choose from and our southern style BBQ cafe, we continue to serve up the authentic flavors that have made us a local favorite. Our vision? To be the go-to place in Central Michigan where anyone can "Cool Down With a Lil' South In Yer' Mouth". Welcome to Northern Bayou – we're excited to serve you!
